There is a world of difference between eating a bad mussel and being allergic to them — so don't worry.

Wash and beard the mussels under cold running water. Chuck any that are cracked, open or at all damaged.

Melt a little butter in a large pan, and sweat one or two chopped shallots and a clove of garlic.

Add the mussels and a glass of white wine. Slam the lid on the saucepan, and shake gently for about four minutes. The mussels are cooked when they are opened. Throw in a handful of chopped parsley and eat with good bread.
